WHere is an easy interpretation of a beverage from the seasonal drinks list. It's a large-volume prepared mix which is packed with the tastes of the Christmas time, making it excellent for a holiday party. Reserve the remaining citrus syrup for morning drinks, desserts, or to mix additional servings of bikinis.
Bikini
Serves 10 people
Ingredients for the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Premix (yields 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Syrup: Combine the listed items inside a pot, heat until it reaches a simmer, agitating until the sugar dissolves. Then, take off the stove and leave to cool fully. Pour into an clean bottle, seal and refrigerate it chilled, it can be stored for about four weeks.
For the Batch Mix: Mix every spirits and syrup into a large bottle, allow it to infuse for one hour, then pass it through , ideally through a fine cloth, so it's perfectly clear.
When ready to serve: Measure 85ml of the batch mix into a mixing glass containing ice, and agitate carefully for one minute to cool it down. Pour into a chilled martini glass or a similar vessel, top with a few cranberries and finish with a quick spritz with the mandarin essence over the top.
